While I loathe how quickly time seems to be passing by these days, I do find myself looking forward to the spring. To lush green trees and going frolicking. I’m reminded of the beauty in growth, renewal, and the simple joys of sunshine and fresh air. Being barefoot in grass. Grounded.

Mitch recently signed me up for a monthly subscription with @gracerosefarm and I’m so excited! He said “you’ll get it at the end of each month, so you’ll have beautiful flowers going into each new month.” I love it here!

How has your Sunday gone? I had no intentions of getting out of the house today, but then I changed my mind at the last minute because I needed to stop moping around. Mitch patiently waited the extra 20 minutes it took me to get ready, and I’m so glad that I got my behind up.

Now it’s time to get this fried chicken going! Happy Sunday everyone - I hoped this chased the scaries away.

Have a little tradition with me!

I make this meal for Mitch every year during the holiday season. He’s convinced that yorkshire is *only* for the holidays, so don’t come for me. Mitch grew up having this meal every Christmas Day, at his grandmother’s house. She recently passed (101 beautiful years), so I’m happy to continue her tradition in our home. Yes, I’m making a few tweaks.

Roasted Chicken Ingredients
• 1.75 - 4lb whole chicken, patted dry
• Salt and pepper
• 2 tsp olive oil
• 1 lemon, quartered
• 3 rosemary sprigs
BUTTER:
• 1 stick unsalted butter , melted
• 3 garlic cloves , minced
• 1 tbsp sage , finely chopped
• 2 tsp rosemary , finely chopped
• 2 tsp of thyme, finely chopped
• 1 tbsp parsley , finely chopped
• 1/2 tsp each salt and black pepper
UNDER CHOOK:
• 1 cup dry white wine , or low sodium chicken broth
• 1 onion , quartered (Note 2)
• 1 garlic bulb

Roasted Potato Ingredients
• Kosher salt
• However many pounds of mini golden potato cut into quarters, sixths, or eighths, depending on size
• A few tablespoons of extra-virgin olive oil
• Small handful picked fresh rosemary leaves, thyme, all that good stuff — finely chopped
• 3 medium cloves garlic, minced
• Freshly ground black pepper
• Small handful fresh parsley leaves, finely chopped

Yorkshire pudding ingredients
• 4 large eggs
• 1 1/2 cups whole milk
• 1/2 teaspoon coarse salt
• 1 1/4 cups all purpose flour
• 4 tablespoons of vegetable oil (for the pan)
